Our Khapli Atta gives almost half yield than regular wheat takes longer to grow and is sourced seasonally rain-fed farms in Maharashtra. It's also stone-ground in small batches at controlled temperature unlike regular atta which is roller-milled at scale.
Commercial atta is milled at high speed which heats the flour and strips out bran germ and micronutrients. We grind on traditional stone chakkis kept below 40°C so the fiber bran and natural nutrients of the Emmer (Khapli) grain remain in the flour instead of being lost to the mill.
